Job Description

Texas Health Dallas seeks to hire a Manager Food Services and Executive Chef.
Location: Dallas, TX
Core Hours
Full time, Monday through Friday, 8am-5pm
Job Duties
Leadership:
Plans, organizes and directs daily operational activities for Retail Cafeteria Operations and Food Production.
Achieves effective utilization of employees, equipment and materials within budget allocation and quality standards.
Incorporate measures to obtain compliance with regulations and accreditation standards.
Participates in team oriented actions to promote team work and administer proper leadership.
Communication with other team members and staff is timely and accurate manner.
Creates and maintains a collaborative work environment.
In charge in absence of the Department Director and Managers.

Financial Operations:
Implements operational programs for best results according to budget.
Handles and communicates financial initiatives in order to meet best outcomes.
Manages cost, revenues, and resources within budget.
Meets productivity.

Human Resources:
Administers proper HR leadership and ensures compliance of staff, HR protocols and policy.
Is accountable for proper record keeping and personnel file updates.
Supervises personnel properly through the following actions: coaches, trains, counsels, schedules, and evaluates employees.
Makes recommendations in the hiring process
Assists staff with information management/processing (i.e. MyTalent, benefit enrollment, surveys, etc.)

Satisfaction:
Develops, tests, modifies, and standardizes recipes to meet patient/customer menu needs.
Forecasts patient and cafeteria meal census, ensuring that appropriate quantities of menu items are prepared.
Oversees menu and recipe development; recipe standardization; service and production functions.
Collaborates with all customer groups (patients, department/hospital staff, physicians and other customers) to meet and exceed needs/expectations.
Oversees safety program and adheres to established sanitation procedures in the preparation and service of meals.
Evaluates patient and customer satisfaction on a regular basis to determine gaps between actual results and expectations.
Collaborates with the leaders to establish expectations, plans and priorities.
Performs other duties as assigned for production, purchasing and retail operations by Department Director and Managers.
Education
H.S. Diploma or equivalent required, And, Associate’s Degree Culinary Arts or related field required.
Bachelor’s Degree Culinary Arts or related preferred

Experience
4 years relevant experience in foodservice, retail and/or high volume restaurant management required
***** Highly prefer candidates with nutrition and culinary experience. Candidates should be creative and have experience developing menus *****

Licenses and Certifications
FPM – Food Protection Manager Food Service Manager’s Certification (TDH) required within 60 days of hire.
Certified Dietary Managers (CDM) preferred upon hire
Certified Executive Chef (American Culinary Federation) preferred upon hire

Skills
Written and oral communication skills. Demonstrates thorough critical thinking and is a team player.
Must have computer experience (Including: Word, Excel, Outlook, Email, PowerPoint and other computer software).
Strong organizational skills and solid foodservice management skills.
Strong ability to identify and implement process improvements. Ability to assure high food quality standards.
