The Gleneagles Hotel is rich in history, for almost 100 years we’ve been sparking adventure across the Glorious Playground, our luxury 5-star hotel and country estate in rural Perthshire. Early 2022, we’re city-bound and creating a new chapter in our history, bringing our countryside flair to life on St Andrew Square, in the heart of Edinburgh.

We have lovingly preserved and restored the iconic, A listed, former Bank of Scotland headquarters to
create the perfect urban gateway, the ‘Gleneagles Townhouse’.

For the position of Head Waiter, we are looking for a confident, creative, and driven individual who can conduct the symphony and intuitively know how to pre-empt the needs of our guests and team.

Gleneagles Townhouse will offer all-day dining in our vibrant restaurant; perfect for breakfasts, long lazy lunches and spirited dinners. Our two bars will be striking, including a rooftop terrace where guests will enjoy extraordinary views over the city, previously only held by the rooftop statues!

Our 33 bedrooms have each been uniquely designed to inspire a sense of understated luxury, with an appreciative nod to the heritage of the building.

Lastly, the Townhouse is also home to our members club, bringing together a community that has a passion for exchanging ideas, discovering new obsessions, collaborating together and simply having fun, with access to exclusive private spaces and on-site gym and wellness.

The Spence
Headed up by one of Scotland’s most exciting young chefs, The Spence will be rooted in classics with a modern twist. Bloody Mary breakfasts, long, lazy lunch options and three-course dinners as well as some fun, naughty nightcaps will all feature on the produce-driven menu. Located in the centre of the old banking hall, the impressive social space echoes its previous life and incredible heritage with a central feature bar situated underneath an extraordinary glass domed ceiling, with original and elaborate features including gantry lighting. Open to everyone, this will be a place to gather and for great get-togethers to unfold.

Lamplighters
With its impressive views of the city’s medieval Old Town to the left and picture-perfect New Town to the right, our rooftop bar, Lamplighters, has been heavily influenced by Gleneagles’ bountiful Scottish surrounds. Serving up a seasonally rotating, locally inspired list of cocktails, local whiskies, beers, spirits, and wine – it will be an exclusive spot to watch the sun set and see the city lights sparkle.

Members’ Lounge
For locals, and those in the know, it’s the members’ club that’s set to stand this Townhouse apart. It will form a community with a passion for exchanging ideas, discovering new obsessions, collaborating, and simply having fun. The Members’ Lounge, the heart of the club home to all-day dining and a full-service bar, is a base for breakfast meetings, catch-up brunches and long, leisurely lunches. The Members’ Snug meanwhile is an office-away-from-the-office; a relaxing lounge space featuring a help-yourself pantry– ideal for catching up on emails and hosting informal meetings. But it is evenings at the Townhouse when the community really comes alive as friends and colleagues meet and enjoy live music and seasonal parties with plenty of chatter and laughter. For nights that require a slightly gentler pace – members can try an intimate wine tasting or settle in for one of the Townhouse’s insightful events.

Delivering a warm and memorable dining experience for our guests and members; attending to each and every query and enquiry in a caring and helpful manner, the consummate professional
Collaborating with other key departments, building strong working relationships, and a great appreciation of your inter-dependencies
You’ll lead daily briefings with the service team to ensure all relevant information is shared, ensuring the smooth running of our F&B operation
Passionate about sharing your knowledge, through your strong coaching style, you’ll ably support the development and progression of your team
Maintaining the highest standards of service, room preparation and presentation throughout the restaurant, playing a significant part in making sure the breakfast, lunch and dinner operation runs without a hitch, and our service is smooth
Taking a keen interest in the operation and developing suggestions as to ways of increasing quality of service; you’ll be proficiently up selling and encouraging other team members to do the same at every opportunity
Interacting with our guests, always warm, professional, helpful and doing everything you can to exceed their expectations; playing your part in making their stay with us 5 star in every way

Ideally, you have experience within a 5 star hospitality environment and an outstanding track record of achievement
Your perspective and approach are always fresh; no matter how many times an issue has been presented to you, to your guest it’s the first time
An early bird some days and a night owl other, working flexibly during the week and weekends
You want to be the best and work with the best; learning from the experts in our team and sharing your knowledge with us
Resilient, with the ability to deal with fast-paced environments, you’re adept at managing several, often conflicting priorities at once
Always warm, thoughtful and sociable, you love to look after our guests and your fellow colleagues alike
Highly motivated and possessing an immense sense of pride in your work; you’re passionate about delivering the high standards for our guests in line with the Gleneagles brand
You have a positive “can do” attitude to solving problems in a professional and courteous manner
A strong team player with great communication skills and an enthusiastic approach; you’re well organised and punctual with an eagle eye for detail
You want to be part of a team that works hard, supports each other and above all has fun along the way
What’s in it for you:
On target earning potential for this role is £31755 / annual , compromising of a base salary of £25,755.60 and the expectation of around £500 monthly in additional gratuities
You’ll be paid every hour worked
