Chef and Food & Beverage Manager Job DescriptionPosition: Chef and Beverage ManagerReports to: General ManagerWe are looking for a professional Chef and Beverage Manager to be responsible for managing all F&B operations and for delivering an excellent guest experience. The successful candidate will be able to forecast, plan and manage all F&B orders, staff and finance. The goal is to maximize sales and revenue through customer satisfaction and employee engagement.Chef & B Manager Responsibilities:- Manage all F&B and day-to-day operations within budgeted guidelines for Food, Liquor and Payroll to the highest standards- Preserve excellent levels of internal and external customer service and resolve customer complaints as appropriate- Design exceptional menus, purchase goods and continuously make necessary improvements- Supervises food prep to include methods, portion sizes/garnishing and professionalpresentation- Directly prepares, bakes and cooks dishes along with gives direction to other cooks- Inspects and tastes prepared foods on a daily basis to ensure quality ingredients, good presentations and recipes meet standards of Marriott and Lotus Management Inc.- Market the Food and Beverage outlet, package deals, promotions, displays, decorations and presentations within corporate guidelines to capture more in house guests and a larger share of the local market to meet/exceed sales and financial goals and objectives- Identify customers’ needs and respond proactively to all of their concerns- Lead F&B team by attracting, recruiting, training and appraising talented personnel- Establish schedules and follow all policies and procedures- Comply with all health and safety regulations- Report to management regarding sales results and productivity- Develop daily check-lists for each department and each shift. Ensure these are being done and done well- Review all payroll punches on a bi weekly basis and approve time off requests- Ensure proper staffing, planning and execution of banquets and events- Performing daily walk-through to ensure full compliance with Department of Health regulations and Marriott International standards- Review all adjustments daily and ensure proper notes are made- BSA for F&B- Food Safety Logs Ordering Food, Beer, Wine, Liquor- Knowledge and understanding of Lightspeed- Perform daily huddles with team- Monthly inventory and weekly bar inventory- Attend and actively participate in weekly department meetingsRequirements:- Proven food and beverage management experience- Working knowledge of various computer software programs (MS Office, restaurantmanagement software, POS)- Ability to spot and resolve problems efficiently- Mastery in delegating multiple tasks- Communication and leadership skills- Up to date with food and beverages trends and best practices- Mastery of food preparation and kitchen cooking skills- Must work a minimum of 50+ hours per week- Ability to manage personnel and meet financial targets- Guest-oriented and service-mindedEducation:- High School Diploma or GED- Culinary School certificate or equivalent work experienceThis job description is intended to provide an overview of the requirements of theposition.
