Executive Sous Chef
Summary of Position
The primary responsibility of the Executive Sous Chef is to support the Executive Chef by implementing and executing all culinary initiatives for the Honda Center. The Executive Sous Chef will lead, mentor, and coach the culinary team throughout daily operations while ensuring operations are efficient and aligned with financial objectives. This position also ensures that exceptional hospitality is delivered, alcoholic beverages are served responsibly, and food quality and sanitation standards are consistently upheld. This position reports to the Executive Chef.
Responsibilities
Support menu creation and development process and event-based planning for approximately $25M in Food & Beverage revenue throughout the venue
Prepare, compile, and analyze reports and data for the annual budget
Project food, labor, and other costs based on anticipated events and revenues
Monitor and manage actual financial results
Take corrective action as necessary to help ensure that financial goals are achieved
Educate team members by participating in programs offered by the Honda Center and external partners of the Honda Center
Ensure proper staffing for maximum productivity and efficiency
Manage and oversee the operation to ensure high standards of quality are met
Control food and payroll costs to achieve maximum profitability
Support the mentorship and development of the Sous Chefs and culinary team members daily
Responsible for ensuring food quality and standards are met throughout all channels of the F&B operation
Responsible for building and maintaining accurate recipes and respective costs
Ensure recipes are executed accordingly by all team members
Engage with venue guests, team members, and internal peers/partners to ensure exceptional hospitality is delivered at all times
Manage the responsible service and security of all alcoholic beverages, maintaining sanitation standards throughout the venue, and the timely certification of staff per department policies
Ensure timely education and learnings of health and sanitation guidelines set forth by the OC Health Department, the State of California, and other governmental organizations
Follow, adhere, practice, and enforce the Safety and Sanitation Standards set forth by the Food & Beverage Department, CDC, and OC Health Department, which includes, but is not limited to, social distancing, use of face masks when in the presence of guests, use of gloves when handling guest food and/or beverage, constant washing of hands, cleaning and sanitizing high contact surfaces, etc.
Support the hiring, training, staffing, and scheduling of all culinary team members
Partner with F&B and Honda Center Senior Leadership to ensure a successful operation through proper forecasting and budgeting
Other responsibilities and tasks as deemed appropriate by the Executive Chef and Senior Management Team at the Honda Center
Skills
Bachelor’s degree in a related field or equivalent experience with a minimum of 7 years experience working in a Food & Beverage environment
Sports & Entertainment and Multi-Unit Operation experience preferred
Extensive knowledge of culinary theory
Exceptional application of skills and knowledge
Experience leading large culinary teams
Experience overseeing multiple locations with varied service types
Strong attention to detail
Excellent communication skills, both written and verbal
Solid organizational skills with the ability to handle multiple projects at one time
Working knowledge of basic PC applications (Microsoft Word, Excel, Outlook, etc.)
Working knowledge of time and attendance system (ABI preferred)
Working knowledge of inventory management software
Ability to work a flexible schedule, including nights, weekends, and holidays
Knowledge, Skills and Experience
Education – Bachelor’s Degree
Certifications Required – NA
Experience Required – 5+ Year’s
