Job Summary : The Executive Chef will create the vision and goals for a culinary department through established processes and protocols. Design and develop new products for fresh foods that will drive profitable and sustainable growth for the company, always staying ahead of culinary trends. Oversees culinary innovation projects as well as improving quality, driving out cost and delivering operational efficiencies. This position leads the development of new and strategic concepts that will drive the short-term budget goals for Wawa’s customizable offer as well as the product development for all commissary operations.
Principal Duties
Oversee all aspects of Wawa Branded Food Development for short-term budget driving concepts including major platforms, category improvements, large scale RFQ’s and Enterprise Productivity initiatives. Use subject-matter expertise to direct, accelerate and guide the process end-to-end, from ideation through commercial roll out.
Establish and lead the accelerated pipeline testing strategy and roadmaps that enable the day-to-day business to achieve our Enterprise Risk Metrics and deploy as the business needs. Lead accelerated prototype development against core businesses, customer and customer requests.
Use culinary expertise, data from sales, research, competitive assessments, vendor network and market trends, to build a pipeline of products for core categories that are able to fulfill budget and advertising requirements while executing within supply chain & budget constraints.
Maintain a pulse in culinary trends and bring the most relevant and influential trends to life for Wawa. Prioritize culinary objectives and constantly evolve to adapt and scale culinary initiatives for an ever-changing growth brand. Objectives and strategy will drive growth by increasing the frequency and loyalty of existing customers while attracting new customers. Build a best-in-class recipe development program to ensure an enjoyable food experience for our customers.
Drive consistent execution of Wawa culinary standards through quality control, process and procedures. Systematically identify, address and initiate resolutions to unacceptable variance in product quality, especially sensory attributes that could negatively impact the brand.
Create an environment that inspires innovation and consistent execution while addressing the needs of the business. Nurture a team of talented, forward-thinking professionals that challenge industry norms, create opportunities & deliver the very best products and experiences.
Lead initiatives that enhance customer experience through the creation of food development strategy and commercialization with an operational focus . Lead menu and recipe development designed to positively impact our customer experience. Develop regional menus that will fit into the core brands and existing infrastructure.
Grow new and enhance existing vendor partnerships. Develop specifications to own and manage through multiple suppliers.
Define project attributes and parameters for initial prototypes. Work closely with vendors to define and refine product specifications while working within specific cost and nutritional parameters.
Consult and advise on Enterprise Productivity initiatives that have product impact, assuring adherence to the Product Development process.
Represent Wawa’s Culinary talent at community events, PR functions, and industry showcases.
Collaborate cross-functionally through each stage of the Product Development process.
Provide overall direction and support for team and monitor and assess individual work in accordance with high standards of excellence. Provide feedback, coaching, support, opportunities for development, complete performance appraisals, take corrective action when appropriate, and participate in hiring decisions.

Basic Qualifications:
Bachelor’s degree in Culinary Arts, Certified Culinary Scientist, Certified Research Chef or related culinary field preferred
10+ years of proven success in developing private label branded food including project management
5+ years managerial, mentoring and development skills supervising technical teams or individuals, with the ability to lead and interact with cross-functional teams
5+ years of restaurant experience in a lead chef role position
Proficient in Microsoft Office Suite
Enterprise Culinary leadership experience with a professional reputation for innovation.
Demonstrated perseverance when faced with challenges and a commitment to the highest standards in the industry.
