GENERAL SUMMARY
The Executive Chef (EC) will partner with the Director of Dining Services (DDS) to create and define the 2Life Dining Program and oversee the daily operation of all kitchen management across campuses. ESSENTIAL JOB FUNCTIONS
In partnership with Chef Managers, the EC lead an efficient production system and maintains a high standard of sanitary conditions in the kitchens
Partner with DDS and Chef Managers in the development of monthly menu planning, create cycled menu management, weekly specials, a la carte, event and action stations
Coordinate kitchen schedules across all campuses to ensure that central production and distribution meet program goals
Monitor food production to ensure compliance with 2Life’s standards for quality, presentation, portion control, safety, sanitation, and other appropriate quality and compliance measures
Develop with DDS, HACPP training program and deliver training, coaching, guidance, and direction to the culinary team
Run point on inventory process development including system and training program and rollout to Chef Managers and culinary teams
Develop with DDS a Master Recipe Core database with resident favorites, 2Life campus favorites, and culinary team specialties
Partner with DDS to analyze recipes to assign prices to menu items, based on food, labor, and overhead costs
Oversee the setup of serving lines, organize and set up culinary teams for success
Establish and maintain documentation of temperature logs and records across all campuses
Assess skill and knowledge of all culinary team members, implement necessary skill training
Provides vacation coverage for Chef Manager at the primary location or additional site kitchens when Chef Manager is unavailable
Assists with 2Life dining growth and innovation via menu planning, production operation, kosher focus, store and café focus, grab and go option at new sites
OTHER DUTIES AND RESPONSIBILITIES
Site-specific duties as listed:
Brighton Campus and Brown House: Assist with dining events
Coleman House: Assist with dining events and café production
Golda Meir House: Responsible for supporting Chef Manager to manage the Golda kitchen and Kosher satellite kitchenShillman House: Assist with menu planning and dining events
PREPARATION, KNOWLEDGE, SKILLS & ABILITIES
A minimum of 7 years experience preparing, cooking, and serving restaurant quality foods
Large scale production experience required
Congregate Dining experience strongly preferred
Must be ServSafe certified
A willingness to learn and follow Kosher laws
Superior leadership and management skills with emphasis on staff mentoring and development, particularly during a time of organizational growth
Exceptional interpersonal and verbal communication skills
Resourcefulness and resilience; with the creativity and adaptability to find multiple paths and solutions to solve problems and overcome challenges
Ability to work independently at times
Must be able to travel from campus to campus
Be flexible
SUPERVISORY RESPONSIBILITY
This role will directly supervise a variety of Chef Managers, Assistant Chef Managers, Cooks, and Utility associates and may indirectly supervise others involved in the overall dining operation
WORKING CONDITIONS/PHYSICAL DEMANDS
Ability to stand on your feet for up to 8 hours
Ability to lift items weighing between 10 to 50 pounds
Constant bending and reaching as high as 8 feet, using step ladder if necessary
Ability to walk through and deliver meals through overheated hallways
Ability to handle equipment at temperatures as high as 500 degrees
Ability to handle temperatures as low as 10 below zero
Will be handling knives and other sharp objects
